Cashew Butter


  • 2 Cups Roasted Unsalted Cashews
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Pure Maple Syrup
  • 1/4 Teaspoon Sea Salt or to taste


  1. In a food processor (I use my dry Vitamix container) combine cashews, oil, syrup and salt. Process for about 30 seconds and scrape sides with a rubber spatula and process to the desired smoothness, adding more oil, 1 teaspoon at a time until desired consistency depending on whether you want it thicker or creamier. You can also alternate with the maple syrup if you want more sweetness. Adjust salt to taste.
  2. Store in airtight container in the refrigerator until ready to use. You can use as a dip, spread, or in other recipes. You can also make it very thin and use as a drizzle on pancakes and french toast.
